Panang Chicken Pineapple Curry Cream

A soft-textured dish that’s easy to eat, and high in protein.

  • Serves: 6

Ingredients

  • 2 Cups Chicken Broth Low sodium
  • 1 Cup Coconut Milk
  • 1 Cup Fresh Pineapple Diced
  • 1 Cup Basmati Rice Cooked
  • 1 Tsp Salt
  • 2 Tbsp Curry Powder
  • 1 Lb Chicken Breast Raw; Thin sliced

Instructions

  1. Combine all ingredients in a soup pot.

  2. Bring to a boil then simmer while stirring for 5 minutes.

  3. Place in a blender and puree.

  4. Serve Hot.
