Delicious, light, spinach salad, excellent for any occasion with just 7 simple ingredients!

Baby Spinach Leaves 1/2 bag; Stems trimmed; Cut into 1⁄2 ribbons

Red Bell Pepper Finely Chopped; Can use yellow/orange

Instructions

Prepare orzo pasta per package directions, drain, rinse and cool.

While orzo is cooking, trim and cut baby spinach and seed and chop bell pepper.

Add spinach, bell pepper and remaining ingredients, toss and chill 2 hours before serving.
