Baked Beetballs

These bite-sized treats are the perfect snack or side. Ready to try in just 20 minutes!

Ingredients

  • 2 cups raw beets peeled and grated
  • 1/2 cup rolled oats
  • 1/2 cup low sodium kidney beans drained and rinsed
  • 1/2 cup panko bread crumbs
  • 1/4 cup white onion minced
  • 1 tsp dried marjoram
  • 3 tsp granulated garlic
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 2 Tbsp nutritional yeast powder
  • 1/4 cup Italian flat pastry

Instructions

  1. Place all ingredients in a food processor and mix until smooth.

  2. Spray a ½ sheet pan with olive oil

  3. Scoop 1oz portions of mixture and place on sheet pan

  4. Bake in a preheated 350 deg oven for 10 min

  5. Serving suggestions, Lace serving plate with 1 oz balsamic syrup and garnish with fresh basil
