Beef and Barley Soup

A high protein soup that will keep you full.

  • Serves: 6

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Lb Stew beef Diced
  • 2 Qt Beef Broth Low sodium
  • 1/2 Cup Pearl Barley Uncooked
  • 1 Garlic Clove Minced
  • 1 Onion Diced
  • 1 Tbsp Molasses
  • 4 Oz Mushrooms Chopped
  • 1/4 Tbsp Fresh Parsley Chopped
  • 1/2 Tsp Dried Thyme
  • Salt and Pepper To taste

Instructions

  1. Heat oil in large soup pot and cook off beef until no longer pink.

  2. Add remaining ingredients. Bring to a boil. Cover and simmer for 45 minutes or until barley is tender.

  3. Season with salt and pepper.
